The Google Translate app has a camera mode. That's what I use for Japanese text.

Modern phones seem to be getting real-time audio translation tools. I haven't ever attempted that, but .. they seem to work.. iOS devices have the Apple Translate button with a big Microphone button in the middle. The GoogleTranslate app doesn't seem to want to do it from Chinese, unfortunately, but that might be a "Google on iOS" thing, so if you have an Android, give it a go on there. On either app, however, I don't expect it to keep up with fast talking, but if you need little snippets, it might do the trick..? -=-=- ''Load, Next List!''

.. As an extra worry, however. Auto-translate tools aren't foolproof, especially when handling none-latin-based languages. The amount of times I've read auto-translated stuff, then had to sit there trying to figure out what they "might've" meant, is staggering. If you're aiming to use this for a project, maybe better to find someone who knows both languages. -=-=- ''Load, Next List!''
